Collard season is almost upon us. I have always been taught to wait until after the hard frost to eat collards. The frost takes away the bitterness. This is how I cook mine. I cook them down in meat grease and enough water to cover the bottom of a skillet. Put a lid on it. Add more water as I need to. When the collards are tender, then I let the water cook out.
