レシピ載せてるよ📝 #角煮 #味噌 #料理 #男飯 #おうちごはん 味噌角煮 豚バラ 600g 水 700cc 料理酒100cc 味醂 50cc 砂糖 大匙3 醤油 10cc 長ネギ 一掴み 生姜 スライス5枚 味噌 白味噌 大匙2 赤味噌 大匙2 バター 2ヶ 作り方 1.豚バラ肉を焼く。 油を敷かずに脂身から焼く。こんがりを越えて焼きすぎ？位まで全体的に焼く。 2.煮る。 1の豚バラをくぐり湯させてサッと纏った油を落として上記の調味料と薬味を入れて3時間煮る。煮汁は少なくなったら水を入れて調整する。 3.仕上げる 水分が200cc以下位まで煮詰まってきたら味噌を入れて中火で煮詰めつつ味噌を纏わせながら10分ほど煮る。バターを入れて完成。 完成。 コメント 焼き感(焦がし)と味噌は合いますので豚バラはギンギンに焼きます。味噌を纏って仕上げの段階で炙るのもアリです。 長時間煮るので水分は飛ぶのを想定して 多めで煮て放置で良いです。 例えばもうすぐ3時間経つけど水分めっちゃ余ってるよね。。とかなったら中火から強火にして早く煮詰めるように調整したり、 水分が少ないけどもうすぐ3時間経つ、

レシピ載せてます📝 #唐揚げ #揚げ物 #料理 #男飯 #おうちごはん 唐揚げ 鶏もも肉 700g 醤油 大匙3 料理酒 大匙3 おろしにんにく 小匙1 おろししょうが 小匙1 🐓鶏もも肉の掃除のコツと考え方 1.皮と身の間に脂があります。コレをまず取り除きます。コレはもちろん食べれますが、ベストの唐揚げを作る場合において、ジューシーさを大事にして作ると思いますが ジューシー＝火を通し過ぎない となります。 取り除いて欲しい脂のコレは 火を通し過ぎないと嫌味なにおいが残る事と、火を通し過ぎない脂の食感の悪いさが 目立ってしまいます。 そのために取り除きます。 2.筋や硬い軟骨を取り除きます。どこや？となりますが 手でなぞって硬そうな気がするところはなるべく多く取り除きます。薄く削ぐだけではありますが、この作業では非常に手を切りやすいので とにかく気をつけてください。 細い糸みたいな筋が集まっている所がありますが、コレは全て取るのはもはや無理です。 ですので筋切りとかでブスブスと刺すか、動画みたいに切り込みを入れると食べてる時に硬いのが口に残るという現象が軽減されて美味しい唐揚げに一
